Delicious Salads For Summer

Avocado Salad

Ingredients
Avocado, sliced    
Babycorn, sliced and blanched 
 Capsicum, sliced  
Tomatoes, deseeded and sliced
Cucumber strips   
For the dressing
Honey   
 Lemon juice  
Mint leaves, finely chopped 
Salt and freshly ground black pepper

Servings – 4
Instructions:

  1. Whisk the ingredients for the dressing together well.
  2. Combine the salad ingredients in a deep bowl, and store in the fridge for at least 30 minutes.
  3. Before serving, toss the dressing and vegetables together.
  4. Serve immediately.

Celery, Cucumber & Grape salad

Veg salad

Servings – 4

Ingredients    
Seedless grapes, halved  
Cucumber, cubed  
Celery stalks, chopped 
Crisp lettuce leaves  
Salt and black pepper powder  
For the dressing
Low-fat curds  
Honey
Mustard

to serve
to taste

Instructions:

  1. Mix the salad ingredients in a bowl and keep in the fridge until you are ready to serve.
  2. Whisk the ingredients for the dressing together.
  3. Just before you serve, toss the dressing into the salad well and season with salt and pepper.
  4. Serve on a bed of crisp lettuce leaves.
