Vegetable Snow Salad

Ingredients     
Home-made low-fat paneer, crumbled
Carrots, grated    
Cabbage, thinly sliced   
 Green peas, shelled and boiled  
Onions, thinly sliced 
Capsicum, grated  
For the dressing
Hung curds 
Oil        
Mustard powder    
Salt and pepper

Instructions:

  1. Whisk the curd, adding in oil drop by drop until it becomes smooth.
  2. Season with salt, mustard powder and pepper.
  3. Toss the vegetables and paneer together in a bowl; pour dressing over and mix well.

BBC Salad

BBC Salad

Ingredients  
Bean sprouts, washed well            
Spring onions, chopped 
Fresh mushrooms, blanched and sliced
Baby corn, blanched and cubed
Red and green capsicum, cubed
Cucumber, cubed  
For the dressing
Garlic cloves , finely chopped    
Fresh basil leaves, finely chopped
Lemon juice 
Olive oil  
Salt and pepper

Instructions:

  1. Heat the oil in a non-stick pan, add garlic and sauté till it browns lightly.Add the basil leaves and mix well.
  2. Take off the heat and let it cool completely. Then, add lemon juice, salt and pepper and mix well.
  3. Combine all the vegetables in a bowl and toss lightly. Refrigerate.
  4.  Just before serving, add the dressing to the salad, mix well and serve immediately.
