Gosht-Kalimirch

Instructions

Heat oil or ghee in a lagan; add the spices and chopped onions and sauté till golden brown. Then add the ginger and garlic paste, put the mutton mix in it and cook for twenty minutes. After this add the tomato puree, chilli powder, dhaniya powder, green chillis, chopped sahi jeera and mix well.

Cook this until the mutton is made tender. Once the mutton is cooked, add half table spoon of ghee and garam masala, and one table spoon of crushed black pepper. Serve the dish with naan, roti or rice.

Instructions

Mix the boneless mutton, ginger and garlic paste, coriander roots, and kashmiri chilli mix together and mince. Add butter, mustard oil, salt, garam masala, jeera powder, methi powder, mix it well and let it rest for an hour.

Take a skewer, make small balls of the mixture and press them onto the skewer to form kebabs. Place the skewer in a clay oven and cook it for 10 to 12 minutes. Remove the kebab from the skewer and serve with mint sauces and lacha onion.
